Overview

Opening in late spring 2018, Ole Red will be downtown Nashville’s most exciting new destination. In collaboration with country superstar and Opry member, Blake Shelton, Ole Red will be a multi-level entertainment venue with a two-story bar and restaurant, private event space and a rooftop restaurant and bar featuring the best views of the city. The Executive Chef will have the unique opportunity to define the Ole Red culinary brand by creating recipes and designing menus its flagship location. This individual will oversee all details related to the execution of the food and beverage experience in this brand new 16,000 square foot structure, which includes two separate kitchens and dedicated private event space. The Executive Chef will create a foundation of recipe, menu and kitchen standards that will be replicated in future Ole Red restaurants. 

Responsibilities

  • Manage all food production and presentation, while leading the culinary team to achieve exceptional standards of excellence and exceed guest experience expectations
  • Orchestrate the planning and operation of two kitchens within a 16,000-square foot multi-floor, dual concept restaurant and banquet/catering space
  • Create and develop menus, standard recipes and presentations by leveraging industry experience and current culinary trends
  • Foster a strong, cohesive team environment where individuals are rewarded and recognized for outstanding performance
  • Customize menus for catering and banquet events, as well as special artist related requests
  • Select, train and develop culinary team in all aspects of the business to prepare them for future growth opportunities throughout the company
  • Responsible for attaining budgeted cost of goods and culinary labor costs to meet and/or exceed financial goals/objectives of the venue
  • Maintain proper purchasing and inventory levels of all food, beverage and non-food and beverage products based on fiscal business projections
  • Process all invoices accurately and in a timely fashion, as well as conduct audits with Accounting as required
  • Create and consistently refine strategic sourcing plan resulting in maximum profitability through optimum purchasing, pricing and rebates
  • Confirm culinary team is properly trained on the maintenance, cleaning and operation of all kitchen and service equipment, ensuring that the highest levels of safety and sanitation are achieved
  • Ensure understanding of and compliance with all food and beverage federal, state, and local rules/regulations, as well as all Opry Entertainment policies and procedures
  • Create and uphold Ole Red standard operating procedures (SOP’s), to include strict controls over loss prevention
  • Lead the culinary training program for chefs designated to open new Ole Red restaurants, which encompasses the execution of all recipes, standards and procedures
  • Perform other duties as assigned

Qualifications

Education           

  • High School Diploma Required
  • Bachelor’s degree in Hospitality or Culinary preferred

Experience:                     

  • Minimum of 10 years restaurant culinary experience required
  • Minimum of 5 years in culinary management
  • Special event and/or banquet/catering required
  • Fine dining and casual dining experience is required
  • Experience opening a new restaurant is preferred
  • Intermediate computer skills with Microsoft Office and familiarity with POS system functionality
  • Excellent verbal and written communication skills
  • Financial background with proven ability to identify opportunities for revenue enhancement and fiscal management
  • Excellent analytical and problem resolution skills, with the ability to proactively recommend solutions
  • Strong leadership and managerial skills that include the ability to coach, develop and clearly communicate expectations

Licenses/Certifications:            

  • State of Tennessee Alcoholic Beverage Commission server permit
  • Valid drivers’ license with a satisfactory driving record
  • CPR certification
