  • Overview

    Assist the General Manager by overseeing and managing catering activities and Tour and Travel services to ensure the smooth execution of all functions and events requiring food and beverage services.


    • Actively solicit new business opportunities by conducting effective sales calls, out of the office sales calls, and presentations to potential clients; handle special event inquiry calls, negotiate space, assist with development of catering menus, create event proposals and conduct site inspections
    • Represent company in communicating with prospective clients, planners and vendors including checking avails/placing holds, conducting site visits, creating budget estimates, explaining venue policies, procedures and best practices. 
    • Serve as primary point of contact with rental and special event clients from event confirmation through event completion, ensuring excellent customer service every step of the way. Work with clients to determine specific objectives and needs, formulate specific event plans.
    • Collaboratively manage event specifics with all internal departments and vendors, clearly describing the objectives and details regarding schedules, staffing, equipment needs, etc. to ensure success for all involved.
    • Ensure that contracts, deposits, insurance coverage and all event-related documents are properly processed.  Process all final settlements to clients and payments to vendors.  Ensure that all internal settlements are completed and reported properly.  Process check requests for artist and vendor payments.
    • Track revenue and expenses throughout event lifecycle, keeping client informed of any deviations from budget. Compile final revenue and expense reports, including appropriate backup, for financial settlements.
    • Provide coverage as Manager on Duty of both private and public events. Serve as main point of contact for Tour and Travel clients and vendors. Supervise internal departments to ensure that all objectives are met and that all stakeholders are satisfied, handling guest issues, maintenance issues, etc. as necessary.
    • Work with General Manager and Restaurant Manager to manage venue calendar in a manner that creates the greatest utilization, revenue, profit and business and operational efficiencies.  Ensure that all invoices and accruals for Ole Red are submitted to accounts payable.
    • Adheres to and reinforces and allies knowledge of all laws, standards, policies, and procedures.  Manages departmental inventories and maintain equipment.  Work with building management to schedule service staff to provide world-class service while maximizing profits.
    • Reviews all banquet event orders to insure they are correct and distributed accordingly.  Act as a liaison to the kitchen staff.  Leads shifts an actively participates in servicing of clients.
    • Perform other duties as assigned.



    College degree in the Business preferably with Hospitality Business Administration or related field or equivalent additional experience.



    • Minimum of 3 years of experience in food & beverage or event planning and production
    • Working knowledge of principles of restaurant management, services and equipment helpful
    • Experience working with catering software system
    • Excellent verbal and nonverbal communication skills required
    • Excellent writing skills with high attention to detail required
    • Proven ability to manage multiple projects simultaneously with differing deadlines required
    • Superior organizational skills required
    • Must be a team player with a positive attitude


    • State of Oklahoma Alcoholic Beverage Commission server permit
    • Servesafe permit
    • Valid driver's license with a satisfactory driving record
    • This position requires a pre-employment drug screening
