Overview

Assist Restaurant Manager with the daily operation of Café Lula including overall quality, service and staff performance with focus on front of house operations.

Responsibilities

1. FISCAL RESPONSIBILITY
Ensure that all employees follow proper cash handling procedures
Ensure daily receipts and deposits are accurately posted with cash control and accounting
Assist Restaurant Manager to ensure invoices are accurately processed in a timely fashion
2. CUSTOMER SERVICE/GUEST SATISFACTION
Follow OEG service standards & procedures
Meet/exceed guest expectations at all times
Investigate food quality and service complaints and follow up with guests as needed
3. OPERATIONS
Supervise day-to-day operations of restaurant
Develop and implement policies & procedures
Assist Restaurant Manager with proper maintenance, cleaning & operation of restaurant areas and service equipment
Ensure that the highest level of safety is achieved
Maintain well-stocked areas with appropriate signage
Ensure understanding of and compliance with all federal, state, and local rules & regulations as well as OEG policies and procedures
4. HUMAN RESOURCES
Assist with recruiting, hiring and training the restaurant team
Create monthly schedules for restaurant staff ensuring appropriate levels of staffing based on forecast
Coordinate time off requests, monitor average hours audits and ensure appropriate breaks during work shifts
Assist Restaurant Manager with annual reviews of staff
5. INVENTORY
Assist Restaurant Manager & Chef to ensure proper purchasing and inventory levels of all food, beverage and non-food and beverage products, as specified by the current menus and volume demands
Ensure adherence to policies and procedures for ordering, transferring, receiving, storing, tracking and controlling inventory including but not limited to the proper documentation and system entry
Conduct regular in-house inventories as well as periodic inventories with accounting
Administer and monitor Loss Prevention programs and systems to protect the company’s inventory and assets
6. HOSPITALITY/CATERING SERVICES
Assist with backstage hospitality, clients, partners and artists to fulfill hospitality requests for concerts and special events, including backstage and front-of-house
Assist sales team for creative pre/post show and café dining options

7. Work front-line positions as needed throughout the day
8. Maintain and demonstrate strong knowledge of food and beverage trends within the hospitality industry
9. Assist with and execute administrative functions such as reporting, forecasting, quality assurance and departmental meetings when needed
10. Perform other duties as assigned

Qualifications

Education:

  • High School Diploma Required

Experience:

  • Minimum of two years of Food & Beverage experience required
  • Minimum of two years staff supervision experience required
  • Intermediate computer skills with Microsoft Office and familiarity with POS system functionality
  • Excellent verbal and written communication skills
  • Problem resolution skills with the ability to proactively recommend solutions

Licenses/Certifications:

  • ABC server permit
  • Valid TN drivers’ license with a satisfactory driving record
  • CPR certification.
  • ServSafe Certification; willing to get certified, and/or food safety knowledge pertaining to proper food handling
